Sola di Capra, often called Soera or Sora, is a typical cheese made in Piedmont which translates to "shoe sole" in the regional dialect.
The cheese takes its name because of the strange, rectangular shape seeming to resemble the bottom of a shoe. This particular cheese comes from Cuneo and is made purely from raw goats milk. The paste is dense and slightly crumbly. Flavors range from a salty start to nutty, sharp finish.
