Formaggella del luinese DOP is a soft goat cheese produced in the area around Luino and in the high mountain lands in Varese province.
Historical documents prove that Formagella had already been in use at the end of the XVI century; in particular, it is mentioned in the shopping list of Valtravaglia priests on the occasion of the visit of Cardinal Borromeo. Formagella is also addressed in a treaty of the XVII century where, in the description of the production area, it says: “grazing lands flourish in the highest parts of mountains where, during the summer, many cattlemen and goatherds produce small piquant cheeses, loved by the local community.
The cheese is produced exclusively by whole and raw goat milk and it needs to age at least for 20 days.
It has a light crust, with possible presence of moulds, an ivory coloured paste, soft and solid. The taste is sweet and delicate, but it becomes stronger with age. The structure is flexible, wet and in part soluble.
Thanks to it solubility and to its taste, Formagella del Luinese DOP is ideal for risottos, but it can also be tasted uncooked with a number of appetizers. It is also a good match with white wines.
