Formadi Frant d'Alpage The flavor is sweet and spicy. It is the result of a mixture of different cheeses such as "dairy" at different maturity levels (40-90/100 days-more than 7 months) and is chopped into slices, cubed and flaked with salt, pepper and milk.
The mixture is then kneaded by hand with the addition of cream to give softness to the product. The preparation of Formadi frant, which often occurs within families today, was designed to retrieve and store cheese that was unfit for curing, and therefore fragmented. It is then mixed and kneaded with salt, pepper, milk and cream until the mixture is smooth. After 40 days of storage, the spicy flavor is contrasted with the sweet sensation.
