Carciofo Spinoso di Sardegna DOP (Spikey Sardinian Aritchoke) is a vegetable grown all over Sardinia, particaularly in the coastal areas and near rivers, where it has an ideal habitat.
The cultivation of artichokes in Italy dates back to the Phoenicians, and ita has been an important part of the national economy. Many varieties are grown, such as Carciofo Brindisino, Carciofo di Paestum and Carciofo Romanesco.
Carciofo Spinoso di Sardegna is the first and only artichoke to gain the DOP label. It has a long body, green with violet nuances and yellow spikes. It features and intense flowery scent, soft structure, and a fine taste thanks to the perfect balance between sweet and bitter and it is also much less astringent, compared to other varieties of artichokes. The stem is soft and just a little fibrous.
Thanks to its many excellent features, it is great to be enjoyed raw in pinzimonio (dipped in an, oil salt and pepper mix), after removing the outermost, harder leaves: this way, all its healthy features and its cleansing power are fully preserved.
It is the main ingredients of many recipes like risottos, pasta dishes or savoury pies. Cut in quarters, battered and deep fried is absolute must: it is fantastic!
A Vermentino di Sardegna or Vermentino di Gallura, are surely the best companion to bring out the charatcteristics of this peculiar kind of artichoke.
